This recipe idea from Bbq.com was made on a cedar plank and placed on the BBQ. It sounded so good I decided to make it in my oven- it was delicious. The meat loaf- my own recipe BTW and the mashed potatoes with the cheese.. etc.. was out of this world good! I think I tweaked it so much it is a new recipe. LOL. Enjoy! I will give you BBQ method too!

Ingredients For chuck wagon meatloaf

  • MEAT LOAF:
  • 2 lb
    lean ground chuck
  • 1 c
    chopped onion
  • 1/2 c
    chopped green bell pepper
  • 1 c
    seasoned italian bread crumbs-not panko
  • 1 c
    evaporated milk (like pet or carnation)
  • 2 lg
    slightly beaten eggs
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • 1 tsp
    ground mustard (dry kind)
  • 1 Tbsp
    brown sugar, firmly packed
  • MASHED POTATOES:
  • 4 lg
    potatoes, cooked and mashed
  • 1/2 c
    cream
  • 1/2 c
    parmesan cheese
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 2 Tbsp
    butter
  • paprika, for garnish
  • parsley flakes, for garnish
  • FOR BBQ MEATLOAF:
  • prepare meat loaf the same as above. instead of baking in the oven. shape on a 1/4 inch thick cedar plank (that has soaked in water for at least 4 hours)and place meat loaf shape on the board and put on the grill with
  • indirect heat on both sides of the meat with temperature of 375^. leave on grill for 30 minutes or until internal temperature of meat reaches 160^. remove from grill and let rest for 10 minutes and proceed with potatoes as above. then place on grill
  • and cook for 45 minutes -until internal temperature reaches 170^ .let rest for 10 minutes before cutting.

How To Make chuck wagon meatloaf

    Meat Loaf: Combine all ingredients in a large bowl and form into a loaf on a large cookie sheet (or the cedar board for BBQ). Press meat together well to hold it's shape. Bake in oven for 45 minutes or until internal temperature reaches 170^. Remove from oven and let rest.

    While meat is baking make the mashed potatoes. Boil potatoes in water to cover until tender when poked with a fork. Drain. Mix and mash potato with the cream,cheddar cheese, salt and pepper to taste and the butter. Blend well. Let potatoes get cold. Then-

    Spread potatoes on a flat small cookie sheet and place in the freezer for 1 hour.(this keeps the potatoes from falling off the meat.) Then with your hand scoop a little at time onto the cool meat loaf -covering sides and top. Sprinkle with paprika and sprinkle with parsley. Bake in oven at 375^ for 45 minutes or until it has heated through. Check at 30 minutes so cheese potatoes do not burn. Internal temperature should read 170^. Enjoy! --- Do the same potato procedure for the BBQ loaf. When BBQ-ing the loaf make sure to put the cover down on grill. Down for the potato coating too!
