This is a very simple dinner that goes back in time. The time when foods were simple and fed alot. I am putting together a cookbook for these times. I love old country cooking and love to bring them back for simple pleasures for todays busy schedules, maybe just for a moment, to slow it down just a little and enjoy. This came from who else but Mr.Food.

Ingredients For chuck wagon dinner

  • 1 Tbsp
    vegetable oil
  • 1 lb
    smoked turkey or beef kielbasa, cut into 1/2-inch slices
  • 3 c
    cooked rice
  • 1
    can (about 16 ounce) red kidney or pinto beans, rinsed and drained
  • 1/2 c
    bottled hickory-smoked barbecue sauce

    In a large skillet, heat oil over medium-high heat; brown kielbasa, drain excess fat, then return kielbasa to the skillet. Stir in rice, beans, and sauce. Cook over medium high heat until thoroughly heated, about 5 minutes, stirring occasionally.
