My husband's recipe. He adds unsweetened chocolate to give the chili a great richness.

Ingredients For chocolate chili

2 lbground beef, pork or turkey

1 stickbutter
-
3garlic cloves, minced

1 lbmushrooms, chopped

1each of red, yellow and orange bell pepper, sliced or diced

1 lgred onion, sliced
-
2 can14.5 oz. diced tomatoes, undrained

2 cwater
-
1 can15.15.5 oz. dark red kidney beans, undrained
-
1 can15.5 oz. light red kidney beans, undrained

2 oz(2 squares) unsweetened chocolate
-
1/2 cchili powder
-
1/2 cgranulated sugar
-
1/4 cparsley flakes
-
1/4 cground cumin
-
1 Tbspground mustard
-
2 tspsalt
-
1 tspblack pepper
-
1 tspcayenne pepper
-
1dash or two of tabasco sauce (or to taste)
How To Make chocolate chili

1In large skillet, over medium heat, cook meat until browned, stirring often. Drain well; set aside.

2Add butter to large stockpot. Turn heat to low-medium.

3Add garlic, mushrooms, onion and bell peppers; cook until translucent, stirring constantly, about 5 min.

4Add reserved meat to stockpot, folding in gently.

5Add remaining ingredients, in order given, stirring well after each addition.

6Heat to boiling. Reduce heat to simmer and cook, uncovered for at least 1 hour (I like to leave it on the stove and simmer for several hours.) Stir occasionally.
