Ingredients For chipotle salisbury steak
- CHIPOTLE SALISBURY STEAK WITH MASHED POTATOES & MUSHROOM-BACON GRAVY
- FOR THE STEAK

4 Tbspolive oil

8 slicebacon

1 mdyellow onion chopped

4 clovegarlic minced

1 lgegg beaten

1 Tbspchopped chipotle chilies more or less depending on desired heat level

1 1/2 lbground chuck
-
1/2 cpanko bread crumbs

salt and pepper
- FOR THE MUSHROOM BACON GRAVY
-
2 Tbspbutter
-
1 lbshiitake mushrooms chopped
-
3 Tbspflour
-
1 cdry red wine
-
3 cbeef stock
-
3 sprigthyme
- FOR THE MASHED POTATOES
-
2 1/2 lbyukon gold potatoes peeled and cut into chunks
-
salt

1/2 cheavy cream
-
1/2 cwhole milk
-
1 stickbutter cut into pieces
-
pepper
How To Make chipotle salisbury steak
-
1For the steak and gravy: Heat 1 tbsp oil in a large skillet. Add the bacon and cook until browned and crispy. remove to drain on paper towels.

2In the same skillet. Add the onion and cook until translucent. Add the garlic and cook 30 more seconds. Transfer the whole mixture to a bowl and let cool.

3Line a sheet pan with parchment paper. Add the egg and chipotle chilies to the onion mixture. Add the ground chuck and panko. Season with salt and pepper. Mix well.

4Shape into 4 patties and place on lined baking sheet. Cover and refrigerate for at least 30 minutes or up to 12 hours.

5Heat 1 tbsp olive oil with the 2 tbsp. butter in a large skillet. Add the mushrooms and cook until browned and liquid has evaporated.. Sprinkle the flour over the mushrooms and cook stirring until flour is browned. Stir in the wine and cook until reduced by half. Stir in the stock, thyme and bacon. Reduce heat to medium and cook about 8 minutes.

6Remove the steaks from the fridge. Heat the remaining 2 tbsp olive oil in a large skillet Add the patties and cook until browned on both sides. Carefully remove the patties to the gravy and cook spooning gravy over them until they are done inside about 30 minutes.

7For the mashed potatoes Put the potatoes in a large pot of salted water. Bring to a boil and cook until fork tender about 25 minutes. drain well and return to pan over heat for 1 minute to dry them out. Pass them through a potato ricer

8Heat the cream, milk and butter over medium heat. Pour over the potatoes and mix well. Season with salt and peppr

9Mound a pile of potatoes on plate. Top with a pattie of Salisbury steak then ladle the gravy over top.
