My mother made chili similar to this when I was young. We were from a small town, so chili itself was considered an 'international dish' when compared to the typical fare of fried chicken and my Aunt Mollie's potatos augratin...ANYway, this is the recipe that has evolved after many years of adaptation to our taste buds. It is THE recipe that every young bride whose young hubby has been a guest at our table. I hope you enjoy it as much as we have enjoyed serving it.

3 lblow fat ground beef...93/7 is great!

1 lgonion (white or yellow) chopped

2jalapenos, fresh

1 cantomatos with chilis (rotel)

2 canchili beans (ranch style original)

1 canblack beans
-
2 cankidney beans, dark
-
1 tspgranulated garlic (not garlic powder)

1 tspgranulated onion (not onion powder)
-
2 Tbspchili powder
-
1 Tbsptony chacere's cajun seasoning
-
5 clovegarlic, minced
-
1can beef consumme (not beef broth)
-
cheese
-
sour cream
-
elbow macaroni, cooked -or-
-
tortilla chips

1Deep, heavy-duty pot works well with this recipe.

2Over medium/high heat, brown your ground meat with onion, garlic and seasonings.

3Put your largest collander in your sink. Add black beans and kidney beans and drain your beans. DO NOT RINSE YOUR CHILI BEANS :-) Rinse with water - but do not wash them completely.

4When the onions are clear, add rinsed beans, your chili beans with gravy, tomatoes, beef consumme.

5I cook this for only 30 minutes - then serve it with cheeses over either macaroni or tortilla chips.
