Ingredients For chili con queso casserole

4 cups corn chips, coarsely crushed

1 t. chopped mild green chilies, or jalapeno peppers

8 oz. shredded cheddar cheese

1 t. margarine, melted

2 cans chili con carne with beans, regular or hot (15 oz. each)

1 1/4 cup chopped onion

2 t. chopped scallions
How To Make chili con queso casserole

1Preheat oven to 400. Grease a 1 1/2 quart baking dish. Sauté onion in butter until transparent, remove from heat and stir in scallions and peppers.

2. Line the bottom of the baking dish with crushed corn chips.. Carefully spread half the chili over the chips, layer half the onion mixture and 1 1/2 cups cheese. Repeat chili and onion mixture. Sprinkle remaining 1/2 cup shredded cheese on top of the casserole. Bake for 20 to 25 minutes. Serves 6 to 8
