There were 7 kids in our house growing up and things were tough sometimes. My mom learned to stretch meals. She served us our chili over elbow macaroni. My family eats it that way today. A great way to stretch a great dish.

Ingredients For chili con carne my mom's way

3 lblean ground beef

3 lggreen bell peppers, diced

2 mdonions, diced

3 qttomatoes, i prefer home canned, broken up

2 tspgranulated garlic

1 tspkosher salt

1 tspfreshly ground black pepper

1 Tbspchili powder, hot

4-6 canchili beans in sauce depending on how you like your chili

1 lgcan pork and beans
How To Make chili con carne my mom's way

1Brown ground beef with bell pepper and onion in a large Dutch Oven. Drain of excess grease.

2Add tomatoes, seasonings, and undrained beans to meat mixture. Simmer for at least 1 hour to marry flavors.

3More or less chili powder, just depends on how hot you like your chili. The pork and beans adds just a touch of sweetness. Try it my families way and serve over elbow macaroni. Chili is also great served over rice.
