1 lblean ground beef

1 can(8 oz) tomato sauce

1 can(10 oz) diced tomatoes with mild chilies

1 canred kidney beans, drained and rinsed

1 1/2 Tbspchili powder

1 tsponion powder

1 tspgarlic powder

1/2 tspground cumin
-
6 mdzucchini
-
1 cshredded chedder cheese

crushed tortilla chips for topping, if desired.
How To Make chili-cheese stuffed zucchini boats

1Preheat oven to 350F. In a medium-size skillet over medium heat, brown ground beef, and drain. Add tomato sauce, tomatoes with their juice, beans and spices. Stir well, and let mixture simmer 5-7 minutes to let flavors meld.

2Meanwhile, slice zucchini lengthwise, and scoop out the center using a teaspoon. Place zucchini boats on a baking sheet, and carefully spoon in the chili mixture. Top with cheese, and bake for 20 minutes.

3Before serving, top with crushed tortilla chips if desired.
