This is the recipe that I created for the Hungry Jack Use Up the Box recipe contest. It became one of three finalists in the "comfort food" category. Unfortunately, it didn't win the contest. It's a delicious dish, though, and I thought I'd share it with my Just A Pinch friends. This is the 4-serving size amount of potatoes, which is how I wrote the recipe for the contest. I prefer it with more potatoes (the 6-serving amount). Just adjust the other potato ingredients according to the instructions on the box of potato flakes. Also, instant potatoes can be swapped with homemade mashed potatoes.

This chili cheese shepherd's pie is easy to prepare, yet fancy enough to serve company. It's a tasty twist on the classic dish. The filling is a hearty chili and has the flavors you'd expect with pops of sweetness from corn. Cheesy mashed potatoes on top make this an easy weeknight meal your whole family will love.

  • 1 lb
    ground beef or turkey
  • 1/2 c
    chopped onion
  • 1 pkg
    chili seasoning, divided
  • 1 can
    diced or crushed tomatoes (14.5 oz)
  • 1 can
    chili beans, hot or mild (15 oz)
  • 1 c
    frozen corn
  • 1 3/4 - 2 c
    water
  • 1/2 tsp
    salt
  • 2 Tbsp
    butter
  • 1/2 c
    milk
  • 1 1/3 c
    mashed potato flakes
  • 1 c
    shredded cheddar or colby cheese, divided

We added an extra 1 tsp of chili seasoning to the chili mixture. If you like a punch of flavor, we suggest adding the extra seasoning.
  • Brown ground beef or turkey with onion.

    Preheat oven to 350 degrees. Brown ground beef or turkey with the onion over medium-high heat until no longer pink.
  • Reserve 1 Tbsp of chili seasoning and add the rest to the ground meat.

    Reserve 1 Tbsp of seasoning and sprinkle the rest over the meat.
  • Add tomatoes, beans, and corn.

    Stir in the tomatoes, beans, and corn.
  • Heat through.

    Cook and stir for 2 minutes, until heated through. Reduce heat to low and simmer while making potatoes.
  • Bring water, salt, and butter to a boil.

    Bring water, salt, and butter to a boil in a medium saucepan.
  • Whisk in milk.

    Remove from heat and whisk in milk and potato flakes.
  • Stir in shredded cheese.

    Stir in 1/2 cup of the shredded cheese.
  • Pour into a greased baking dish.

  • Spread mashed potatoes on top.

  • Top with remaining cheese and chili seasoning.

  • Bake for 30 minutes.
