I haven't made this in a long time - since the kids were young. I used to have to grate the potatoes myself; but today you can buy fresh pre-grated potatoes, and it saves on time.

Ingredients For cheesy potato casserole

1 lbground beef

1 pkgfresh hash brown potatoes (about 3-4 cups)

1onion, sliced

1 cantomato soup

salt and pepper

2 cgrated cheddar or monterey jack cheese
How To Make cheesy potato casserole

1Preheat oven to 350°. Brown ground beef and drain off fat. Season with salt and pepper.

2Spread potatoes on bottom of 8 x 12 baking dish. Cover with the sliced onion, tomato soup, and salt and pepper. Top with the browned beef.

3Bake 30-40 minutes, until potatoes are done. Top with the grated cheese, return to oven and bake 10-15 minutes longer until cheese is melted. Serve topped with ketchup and dill pickles if desired. Also good with cooked bacon strips across top.
