Ingredients For cheesy enchilada bake

1 lblean ground beef

1bell pepper, chopped

3garlic cloves, minced

16 ozblack beans, rinsed and drained

16 oztomato sauce

16 ozstewed tomatoes, mexican

1 cpicante sauce
-
1 tspcumin
-
1/2 tspgarlic salt
-
8tortillas, corn
-
1/2 cred onion, finely chopped

1/2 colives
-
1 ccheddar cheese, shredded

1/4 tsponion powder
-
1/4 tspgarlic powder
-
lettuce, shredded
-
low fat sour cream
-
tomatoes, chopped fresh
How To Make cheesy enchilada bake

1Brown meat with pepper, onion and garlic; drain. Add beans, tomato sauce, stewed tomatoes, picante sauce, cumin, garlic salt, garlic powder and onion powder. Simmer 15 minutes.

2Top with tortillas. Top with half the remaining meat mixture; sprinkle with cheese and olives. Repeat layers (except for cheese). Cover tightly with aluminum foil. Bake at 350 for 20 minutes. Remove foil and top with remaining cheese. Bake uncovered for 5 minutes. Top with lettuce, tomato, sour cream and additional picante sauce.
