cheesy beef enchiladas

We love spicy food especially mexican, tex mex, and cajun with all those great seasonings in them. My husband and I both love to cook and try different things so I just added a few more seasonings to my recipe for beef enchiladas which may have been a little too spicy this time. All in all it was good with just a little kick to it.

Ingredients For cheesy beef enchiladas

1 lbground chuck, round or beef

1 cangreen chiles

1 canchili beans
-
1 Tbspchili powder
-
1/2chopped medium onion

1 canred enchilada sauce
-
a pinch of red peppers (optional)

1 pkgtaco seasoning mix

1 tspgarlic
-
1 cancream of mushroom soup
-
1/2 cchunky salsa
-
1 pkgmexican blend shredded cheese

flour tortillas
How To Make cheesy beef enchiladas

1Fry the ground beef, and onion until brown. Drain and add other seasonings, chili beans and salsa to beef mixture, set aside. In a saucepan mix enchilada sauce and mushroom soup and heat stirring out all the lumps from the soup. Set aside.

2heat small amount of butter or oil and place flour tortillas in it turning until coated. Spoon the meat mixture and sprinkle cheese on top of the meat roll and make an enchilada and place seam side down in greased baking dish.

3After placing all stuffed enchiladas in baking dish pour enchilada sauce over top and sprinkle with cheese (I use mexican cheese or taco cheese). Bake until bubbly. Serve with sour cream, shredded lettuce, tomato, and salsa.
