Ingredients For cheese lovers mexican meatloaf

1 lblean ground beef

1/2 conion, diced

1 lgpoblano, diced

1diced tomatoes
-
1jalapeno, diced

1 tspea. cumin, ancho chili pwd, gran. garlic, and black pepper

1/4 ccilantro, fresh, diced
-
2hot links, diced
-
1 cfrozen corn, thawed

2eggs
-
3 ccolby or cheddar cheese, grated
How To Make cheese lovers mexican meatloaf

1Remove seeds and chop poblano and jalapeno. Also chop onion, tomatoes, and cilantro. In a large bowl mix together ALL ingredients and 1 c of cheese.

2On foil, pat out meat into rectangular shape, about 1 1/2 thick. Place 2 c of cheese (reserving remainder for top).

3Use foil as a guide and beginroll meat up and over cheese. Seal ends of meat well and pat into a rectangle square with a flat top. Using foil, lift meat roll into baking dish, place seam side down. Cover snuggly, bake 350 degrees for 1 hr, uncover, top with cheese and cook 30 min more.
