This turns out good every time I make it. I usually separate this into 2 pans, make one and freeze one.

Ingredients For carolina meatloaf

  • 1 lg
    egg, beaten
  • 3 lb
    ground beef
  • 1 c
    whole milk
  • 1 c
    plain bread crumbs
  • 1 c
    tomato sauce
  • 1 sm
    bell pepper, chopped fine
  • 1 sm
    sweet onion, chopped fine
  • 1
    celery rib, chopped fine
  • 1 tsp
    black pepper
  • 1/2 tsp
    salt
  • 1 Tbsp
    regular mustard
  • 1 Tbsp
    brown sugar, light
  • 1 c
    ketchup

How To Make carolina meatloaf

    In large bowl mix, egg, sauce, milk, onion, pepper, celery,bread crumbs, salt and pepper together. Crumble ground beef into this. Shape this into 2 (two) loaves. Place these into a 9x13 inch pan. Or can freeze one at this point.

    Bake at 350 degrees for 1-1/2 hours. Remove from oven during last ten minutes of baking. Whisk ketchup, mustard, and brown sugar together, Pour over meatloaf, and return to oven for remaining 10 minutes.

    Allow to cool slightly and will slice better. Great for cold meatloaf sandwiches.
