Ingredients For cape cod cranberry meatloaf

1/4 cwhole cranberry sauce

1 tspsalt

1/2 tsprosemary
-
1/4 tspwhite pepper
-
1/2 tspmarjoram
-
1/2 tspdried thyme
-
2 lgeggs, lightly beaten
-
1/2 cbread crumbs, plain
-
1/4 cketchup
-
1finely chopped onion
-
1/2 cmilk
-
2.5 lbground chuck
-
3/4 cdark brown sugar, firmly packed

2bay leaves
How To Make cape cod cranberry meatloaf

1Preheat the oven to 350 degrees.

2Lightly oil a 9 x 5 x 3-inch loaf pan.

3In a small bowl, combine the cranberry sauce and brown sugar. (NOTE: sometimes I add a few tablespoons of chili sauce for an extra kick)

4Place the cranberry sauce mixture in the bottom of the prepared loaf pan.

5In a large bowl, combine the remaining ingredients except the bay leaves and mix well.

6Set the meatloaf mixture in the pan on top of the sauce.

7Top the loaf with the bay leaves and bake for 1 1/2 hours or until done.

8Allow the loaf to cool for 20 minutes.

9Remove the bay leaves.

10Very carefully turn the loaf onto a serving plate so that the sauce side is up.

11Drizzle the pan juices over the loaf.
