A great one pot meal. You can also put this in a 275 degree oven and let it go all day or a crock pot set on low.

Ingredients For bunyan's diabetic beef stew

  • 2 lb
    boneless chuck roast, cut into 1 inch cubes
  • 1/2 c
    whole wheat flour
  • 1, 24 oz
    can tomatoes, crushed
  • 1 c
    frozen peas
  • 1 c
    frozen green beans
  • 3 lg
    carrots, sliced
  • 1 lg
    onion, large dice
  • 3 ribs
    celery, chopped
  • 1 tsp
    low sodium beef base disolved in 1 cup of hot water
  • 1 Tbsp
    worcestershire sauce
  • 1 1/2 tsp
    sea salt
  • 3/4 tsp
    freshly cracked black pepper
  • 1 sm
    bay leaf
  • 8 sm
    red potatoes, unpeeled & quartered
  • 1 c
    fresh button mushrooms, sliced

How To Make bunyan's diabetic beef stew

    Heat the olive oil in a large dutch oven
  • 2
    Dredge the cubed beef in the 1/2 cup of w/w flour
  • 3
    Brown the beef in the hot oil
  • 4
    Add all of the other ingredients, and enough hot water to just cover everything.

    Bring to a boil, lower heat, simmer slowly until the beef is tender. About 2 hrs
