I’m in the test kitchen… The sun is streaming through the windows. I’m in the mood for a sammie… I found some small French rolls left over from a catering job… A bit more rummaging about… A nice beef roast (promising)… Various blocks of cheese… Some fresh tomatoes… A plan was forming in my brain… A Brazilian Bauru Beef Sammie. I’ll need a good sauce to compliment the beef, but we’ll talk about that later. If you ever find yourself in São Paulo, you have to try one of the “authentic” Bauru sandwiches. So, you ready… Let’s get into the kitchen.

Ingredients For brazilian roast beef sammie (bauru)
- THE SAMMIE

2crusty french rolls

1/2 lbroast beef, thinly sliced

1 mdtomato, garden fresh, cut into four slices

dill slices

4 ozfresh mozzarella cheese

4 ozfresh pepper jack cheese

4 ozfresh sharp cheddar cheese
- THE SAUCE

1 Tbsphorseradish
-
2 Tbspmayonnaise

1 tspfrank’s red hot sauce
How To Make brazilian roast beef sammie (bauru)

1Gather your ingredients.

2Combine the sauce ingredients, and allow them to rest on the countertop while you prepare the rest of the sandwich.

3Slice the roast, or purchase it already sliced.

4Chef’s Tip: You want thin-sliced beef, but not too thin. If you have it sliced by your butcher, tell him/her that you want it sliced for sandwiches.

5Chef’s Note: I used a smoked bottom round

6Add the cheeses to a pot over a bain marie, and allow to slowly melt.

7Let it get good and melted.

8Slice the tomato; you’ll need four slices.

9Cut the rolls in half, two tops, and two bottoms.

10Hollow out the bottom half.

11Add some of the sauce to the bottom part of the bun.

12Layer the beef on top of the sauce.

13Add the tomatoes.

14Add the pickles.

15Add the melted cheese.

16Place the tops on the rolls, and cut in half.

17Serve with some chips, and beverage of choice. Enjoy.
