Ingredients For bobotie

  • 2 lb
    ground beef or 1 # ground beef and 1#ground pork
  • 2
    onions,chopped
  • 1 can
    (16oz)tomatoes
  • 1 1/2 Tbsp
    sugar
  • 2 Tbsp
    curry powder
  • 2 Tbsp
    vinegar
  • salt
  • 2
    firm bananas,sliced
  • 1
    apple,peeled,cored and diced
  • 1 Tbsp
    apricot jam or 4 canned apricots,sliced
  • 1/4 c
    slivered almonds
  • tomato juice for thinning
  • cooked rice for serving under the babootie

How To Make bobotie

  • 1
    Brown meat and drain off fat. Add onions,tomatoes(with juice),sugar,curry powder,vinegar,salt to taste,bananas,apple,jam or apricots,and almonds.

    Simmer gently,stirring frequently,for 30 minutes Add tomato juice if too thick.

    Serve over rice.
