Why not make a simple meal, like meatloaf, an outstanding meal??? That's what I did. Even the kids love it!

Ingredients For blue cheese and walnut meatloaf
- BLUE CHEESE AND WALNUT FILLING

4 ozcream cheese, room temp
-
1/2 cwalnuts, chopped coarse

coarse ground salt and pepper
-
4 ozcrumbled blue cheese
- MEATLOAF
-
2 lbground beef (or turkey)

1 csaltine crumbs
-
1/2 cchopped onion
-
1/2 cchopped bell pepper
-
2egg
-
3/4 cevaporated milk (up to 1 cup)

2 tspsalt
-
1 tspblack pepper
-
1 tspgarlic powder
-
1 tspground coriander
How To Make blue cheese and walnut meatloaf

1For filling: in a medium bowl stir cream cheese until softened, Mix in walnuts, season with salt and pepper. Fold in blue cheese, breaking it up as little as possible. Set aside until ready to use.

2For Meatloaf: Combine all meatloaf ingredients. Place on a 12x16 inch piece of wax paper, sprayed lightly with cooking spray, and pat firmly and evenly into a 10x12 rectangle.

3Spread blue cheese mixture over center of meatloaf, evenly. Spread out to edges as far as possible.

4Roll up jelly roll style, starting from the short end. Gently lift wax paper and remove as you roll. Seal the ends well and place, seam down into greased baking dish.

5Bake at 350 for 50-60 minutes or until no pink remains. Allow to stand for 10 minutes before cutting.
