This is a slow cooker recipe. I first made it for a work potluck in '99 and it was a big hit. It's so good on a cold day. Enjoy!

Ingredients For black beans and rice

2 lbbeef smoked sausage, cut in 1" chunks

3 15oz canblack beans, drained

1/2 cyellow onion, chopped

1/2 ccelery, chopped

4-5 clovegarlic, crushed

2 tspthyme, dried
-
1 1/2 tsporegano, dried

1 1/2 tspblack pepper
-
1/4 tspred pepper flakes or a few dashes of hot pepper sauce

1chicken bouillon cube

5bay leaves, dried
-
1 candiced tomatoes

hot cooked white or brown rice
How To Make black beans and rice

1Brown sliced sausage in a skillet. Drain on towels to remove excess fat.

2Put all of the ingredients, except rice, into a large slow cooker.

3Cover and Cook 8 hours on low or 4 hours on high. Remove bay leaves before serving. Serve over hot cooked white or brown rice. I say this serves 10 or more per recommended servings but a family of 5-6 could easily finish this off if eating large portions.
