Need dinner on the table in less than 30 minutes? A surprisingly easy meal using ground beef to create an inexpensive Thai style meal. Though there are a number of ingredients, there are few steps. If you like more heat, simply add more prepared curry paste.

Ingredients For betty's thai style ground beef

  • 1 cup thinly sliced onion
  • 2 teaspoons minced garlic
  • 1 lb (500 g) ground beef
  • 1 teaspoon prepared thai red curry paste
  • 1 cup tomato sauce (passata)
  • 1/2 cup coconut milk
  • 1 tablespoon brown sugar
  • 2 teaspoons fresh lime juice
  • 1 tablespoon asian fish sauce
  • 1 cup dry roasted peanuts
  • 1 pepper (capsicum) sliced or diced
  • 1 cup green beans
  • 1 teaspoon coconut oil (for frying)

How To Make betty's thai style ground beef

    Heat a large pan or skillet over a medium - high heat. Melt the oil in the pan.

    Gently cook the onions for 3-5 minutes. Add the garlic and fry until fragrant.

    Add in the beef and fry until browned.

    Add the curry paste and the tomato sauce (passata) until fragrant only a couple of minutes.

    Add the sugar, lime juice, fish sauce, peppers and beans and cook a further 2-3 minutes.

    Remove from the heat and top with the peanuts.

    Serve with white rice, jasmine rice or noodles (vermicelli is my favourite).
