My Mom always made this for us kids when we were growing up. It's like a stuffed bell pepper without all that hassle!

Ingredients For bell pepper casserole

  • 1 lb
    ground beef
  • 1/3 c
    finely chopped bell pepper
  • 1/3 c
    finely chopped onion
  • 1/2 c
    uncooked rice
  • 2 c
    hot water
  • 6 oz
    can tomato paste
  • 1 1/2 tsp
    salt
  • 1/4 tsp
    pepper

How To Make bell pepper casserole

    Heat oven to 350.
  • 2
    Brown meat over medium heat in a large skillet; drain fat and crumble with fork.

    Add bell pepper and onion to meat and stir to combine.

    Add rest of ingredients**. Stir till well mixed. Pour into a 2-Quart baking dish with a lid. Cover and bake 1 hour.

    ** When adding the rest of the ingredients, I always put them in a bowl first & mix together before adding to the meat mixture.
