Ingredients For beef stroganoff

2-3 lbstew cubes

2 Tbspbutter
-
2 Tbspcanola oil

1/2 cflour

3medium onions, sliced

2 pkg(8 oz.) sliced fresh mushrooms

3 cbeef broth
-
2/3 csour cream
-
hot buttered noodles or white rice
-
1/4 cchopped fresh parsley
How To Make beef stroganoff

1In a large, deep skillet over medium heat, melt butter. Stir in onions and mushrooms; cook for 3 minutes; remove from pan and set aside.

2add 2 Tbsp. vegetable oil to pot

3Toss stew meat with flour until well coated. Add beef to the pot and cook until browned. Add a bit more oil if needed.

4Stir in beef broth until smooth. Bring just to a boil then turn heat down to low.

5Cover and simmer over low heat until meat is tender, about 40-50 minutes.

6Remove pan from heat.

7Mix sour cream with a bit of the hot broth until smooth, then stir gently into the pot.

8To serve, ladle some of the stroganoff over hot egg noodles or rice and sprinkle with fresh parsley.
