Ingredients For beef roll ups

6 slicesirloin tip roast, cut in wedges

1 Tbspparsley

1/2 cmushrooms, drained

2 cmilk

1/4 tspsalt

2 Tbspflour

2 Tbspbutter
- SAUCE INGREDIENTS

3 Tbspbacon fat
-
3 slicebacon, uncooked

1green bell pepper
-
1onion
-
2carrots, peeled
-
pepper
-
salt

1 tspworcestershire sauce
How To Make beef roll ups

1FOR THE BEEF:

2Coat meat well with mixture of flour, salt and pepper.

3Cut each carrot into 3 pieces.

4Cut onion into 6 wedges and green pepper into 6 strips.

5Slice bacon strips into 3 pieces each.

6Place a piece of uncooked bacon, carrot, onion and green pepper on each piece of meat and roll up.

7Tuck under ends to keep vegetables inside the roll.

8Insert wooden picks through folded ends and through center of each roll.

9Melt fat in skillet.

10Slowly brown meat rolls on all sides.

11Place meat rolls in casserole.

12FOR THE SAUCE:

13Melt butter.

14Blend in flour, salt and pepper.

15Heat until it bubbles.

16Remove from heat and gradually stir in milk.

17Return to heat and cook rapidly, stirring constantly, until sauce thickens.

18Add mushrooms, parsley and worcestershire sauce.

19Pour over meat.

20Cover casserole and bake at 350 for 1 to 1 1/2 hours or until meat is tender when pierced with a fork.
