beef/pork essentials: bacon-wrapped heaven
I worked out the ingredients in this recipe about a week ago and served them up the other day; everyone enjoyed them. Something about working on a new recipe in the late evening and morning. There is a certain clarity of thought in those quiet hours that enhances creativity… or at least that is my story, and I am sticking to it. The Sauce blends with the beef and pork, creating multiple levels of flavor, and of course the bacon helps too. So, you ready… Let’s get into the kitchen.

2You will need a skillet and a baking sheet, to make this recipe.

4Gather your ingredients (mise en place).

5Grinding the Meat

6If you are grinding your own, cut the pork and beef into cubes.

7Grind, using the course grinder plate.

8If you are not grinding your own, see if you can get course ground from your butcher, sometimes call a chili grind. If you cannot, no worries, just use the ground meat that you already have.

9Making Bacon-Wrapped Heaven

10Add the ingredients for the sauce to a small bowl, then whisk to combine.

11Add the ground pork and beef to a large mixing bowl.

12Sprinkle the dehydrated onions over the top, then add two tablespoons of the sauce.

13Using your hands or fork, gently combine the ingredients.

14Cover with some cling wrap, and place in the fridge for about an hour.

15Place a rack in the middle position and preheat the oven to 350f/175c.

16Divide the mix in half and make two, 6-ounce patties.

17I am using a ring to make the patties; however, that is not necessary, just make them thick and of even thickness.

18Brush the tops with some of the Sauce.

19Add about a tablespoon of non-flavored oil (grapeseed), into a medium-high preheated skillet, then add the patties, sauce-side-down. You should hear a nice sizzle.

20After about about 1 minute, brush more sauce on the tops, and flip them over for an additional minute.

21Remove from the skillet and wrap in a piece of thick-sliced bacon… or two.

22Bake in the preheated oven until the bacon begins to crisp, and the meat is cooked thru, about 10 – 12 minutes.

23Brush the tops with a bit more of the sauce before serving.

25Serve with your favorite sides. In this photo, I added some sautéed shrimp and called it Surf & Turf. Enjoy.
