I love a good hearty Beef Noodle Soup..Yummy beef broth, and Kluski noodles..mmmmmmm..it's Crock Pot season..love it!

Ingredients For beef noodle soup (crock pot)

  • 2-3 lb
    beef roast, cubed, i use a chuck roast
  • 1/4 c
    olive oil
  • 2 Tbsp
    butter
  • 1 lg
    onion chopped
  • 4 c
    beef broth
  • 2 c
    water
  • 1/2 tsp
    celery seed
  • 1 tsp
    fresh ground pepper
  • salt to taste
  • 1 c
    frozen peas
  • 4
    carrots sliced thin
  • 2-3 c
    kluski egg noodles or thick egg noodles..this is what i use when don't have kluski's..
  • 1 Tbsp
    beef bouillon, if want more beef flavor

How To Make beef noodle soup (crock pot)

    In a heavy skillet, add olive oil and butter. Brown cubed beef on all sides. Remove from skillet and place in heated crock pot. Add onion to same skillet and saute. Then add to crock pot. Add beef broth, water, celery seed, black pepper and salt. Allow to slow cook for 8 hours on low.Add the boullion now too if not beefy enough.. Add peas and carrots one hour before serving.

    Cook noodles according to package directions. Drain, add noodles to crock pot, gently stir to mix. Heat through, and ladle into bowls.. I serve buttermilk bisquits with..ENJOY!
