It appears that I have this recipe posted twice. Sigh. Please ignore this one and use the following recipe instead. Sorry and thanks. https://www.justapinch.com/recipes/main-course/beef/liver-and-onions-2.html I've had this recipe for probably 40 years. I don't remember where I got it, but most folks who like liver really love it. There have been a couple of occasions where it converted a couple of 'haters' too. lol.

Ingredients For beef liver and onions

1 1/2 lbliver

1/4 cflour
-
3 slicebacon
-
1/2 conion, sliced

1/2 cbeef broth
-
1/4 cwater
-
1/8 tsppepper
-
1/8 tsptarragon
How To Make beef liver and onions

1Coat liver with flour; set aside.

2Brown bacon; drain on paper towels.

3Brown onions in bacon drippings.

4Brown liver quickly in same skillet, about 1 minute on each side. Drain fat.

5Combine broth, water, liver, pepper and tarragon.

6Cover and simmer 20 minutes until liver is fork tender.

7Uncover; top with bacon.

8Simmer uncovered 5 to 10 minutes until sauce is consistency of gravy.
