3 slicebacon, chopped

2 smonions, finely chopped

1 cbeef broth, hot

1 tspdijon mustard

1/4 cbread crumbs

1 Tbsptomato paste
-
2 Tbspchopped chives or scallions

1/4 tspwhite pepper
-
2 lbflank steak
-
1 tspdijon mustard
- STUFFING INGREDIENTS

2 Tbspvegetable oil

1 smchopped onion
-
4 ozmushrooms, sliced and drained

1/4 cchopped parsley
-
2 Tbspketchup
How To Make beef flank steak with mushroom stuffing

1Lightly salt and pepper steak on both sides.

2Spread one side with mustard.

3Prepare stuffing.

4Heat oil in frying pan.

5Add onion, cook 3 minutes until lightly browned.

6Add mushrooms; cook 5 minutes.

7Stir in parsley, chives, tomato paste and bread crumbs.

8Season with salt, pepper and paprika.

9Spread stuffing on mustard side of steak.

10Roll up jelly roll fashion and tie with thread or string.

11Prepare gravy.

12Cook bacon in dutch oven or heavy casserole until partially done.

13Add meat roll; brown on all sides, approximately 10 minutes.

14Add onions; saute 5 minutes.

15Pour in beef broth; cover dutch oven.

16Simmer 1 hour.

17Remove meat to preheated platter.

18Season pan juices with mustard.

19Salt and pepper to taste, stir in ketchup.
