Ingredients For beef fajitas

3 lbbeef skirt steak

1 csour cream
-
1 cguacamole
-
4 csalsa
-
16flour tortillas
-
4 smonions, quartered

1/2 tsppepper
-
1 tsporegano
-
1 1/2 tspcumin
-
4minced garlic cloves
-
1/3 ctequila
-
1/3 csalad oil
-
1/2 clime juice
-
1/4 ccilantro leaves, finely chopped
How To Make beef fajitas

1Cut steak crosswise into 12 lengths.

2Mix lime juice, oil, tequila, garlic, cumin, oregano and pepper and marinate meat and onion in mixture overnight or at least 4 hours.

3Pre-cook onion quarters until partly done.

4Grill onions and meat on indoor or outdoor grill until meat is rare to medium (do not overcook) and onions are soft.

5Keep warm.

6Heat tortillas either on grill or in microwave until soft and warm.

7Have garnishes assembled: Salsa, guacamole, sour cream, cilantro, etc.

8Each person assembles their own -- meat slices down center of warm tortilla, garnishes on top, fold up bottom, fold sides up to enclose filling, eat out of hand.
