Ingredients For beef fajitas

8 mdflour tortillas

4 clovegarlic, minced

1 mdonion, thinly sliced

2red or green bell peppers, sliced

2 Tbspcanola oil
-
1 lbbeef stir-fry or fajita
-
1 lgjalapeno, seeded, minced

1 Tbspchili powder
-
1/2 Tbsppaprika
-
1/2 Tbsporegano, dried

1 tspsalt
-
1/2 tspcumin
-
1 Tbsplime juice
-
plain yogurt
-
1 pkg4-cheese shred
How To Make beef fajitas

1In a large skillet, heat 1 tbsp oil over med heat.

2Cook garlic, onion, bell peppers and jalapeno until the onion is translucent and peppers are crisp-tender (I sometimes steam them to get them to cook faster); remove from pan.

3Add the remaining oil; brown the beef for 2 minutes. Stir in herbs, spices and lime juice.

4Return vegetables to the skillet, heat through and serve in tortillas with yogurt and cheese.
