beef essentials: spicy chili taco meat
We had a Mexican Sunday with a big taco bar, and among the usual items, I cooked up some spicy ground beef, shredded chicken, and grilled shrimp. I played about with the taco meat; tried a few new spices, and here you go… Another taco meat recipe that is Easy/Peasy to make. At least that is my story and I am sticking to it. So, you ready… Let’s get into the kitchen.

Ingredients For beef essentials: spicy chili taco meat

- THE ONIONS

1 tspgrapeseed oil, or other non-flavored variety

1/2 mdyellow onion, chopped finely
- THE MEAT

1 lbground beef, lean variety

12 ozbeef stock, not broth
- THE SPICES

1 Tbspchili powder, i like it hot

2 tspground cumin
-
2 tspdried oregano, ground (if you have mexican oregano, use it)

2 tspdehydrated onions, ground

1 tspwhite pepper, freshly ground

1 tspsmoked paprika
-
1/4 tspcayenne pepper, or to taste

1/4 tspgarlic powder

1 pinchsalt, kosher variety, fine grind

3To make this recipe easier, put all the dried spices into a single bowl, and then just dump them in, when needed. Easy/Peasy.

4Gather your ingredients (mise en place).

5Finely chop up the onion.

6Add the oil to a skillet over medium heat, then add the chopped onions.

7Stir until they soften, about 3 – 5 minutes.

8Add the ground beef and begin to break it up using a wooden spoon.

9Continue to break up the beef for another 3 – 5 minutes.

10Toss in all the dry spices.

11Stir to combine with the beef, about 3 – 5 minutes.

12Add the beef stock and lower the heat to a simmer.

13Stir and allow the stock to reduce until the mixture begins to thicken, about 8 – 10 minutes.
