Here is another lockdown recipe that is easy to make, totally tasty, and can be made with stuff you have lurking in your cupboards, pantries, and fridge. And, yes, if you look at the main photo, there really is a burger laying underneath that mound of yummy caramelized onions. I am limiting the spices (salt/pepper) in the recipe so that the flavors of the taters, burgers, and onions shine through. Easy/Peasy to make and tastes awesome. So, you ready… Let’s get into the kitchen.

Ingredients For beef essentials: burgers on sweet potato mash

- THE MASHED SWEET POTATOES

2 mdsweet potatoes, peeled and roughly cubed

3 Tbspsweet butter, unsalted

3 - 4 Tbspheavy cream, or milk
- THE CARAMELIZED ONIONS

1 lgyellow onion, thinly sliced, caramelized, more on this later

1 Tbspgrapeseed oil, or other non-flavored variety

1/2 lbground beef, lean (80/20)
- THE SPICES

2Making caramelized onions is an artform. After a long, slow cook in the pan, they develop this delicate flavor that cannot be produced any other way. Here is the recipe I use: https://www.justapinch.com/recipes/side/vegetable/master-class-caramelizing-onions.html?r=22 Since caramelized onions store well in the fridge or the freezer, I would suggest making a big batch and saving what you do not use for another recipe.

3Do not have any ground beef, no worries, substitute an equal amount of ground pork or chicken. No sweet potatoes… sub whatever taters you have.

4Gather your ingredients (mise en place).

5Make the caramelized onions using the above recipe, or one of your own.

6About 30 minutes before the onions are ready, add the chopped sweet potatoes to a lightly salted pot of water, and boil, until softened, about 20 – 25 minutes.

7When the onions are ready, take about half of them, and mix them into the ground beef, and divide into two patties.

8Push the remainder of the onions to the sides and place the burgers into the pan over medium heat.

9Cook 3 – 4 minutes per side, until they are cooked through and beginning to brown.

10While the burgers are cooking, drain and add the sweet potatoes to a bowl; along with the butter and cream (or milk). Then mash up with a fork, or potato masher.

11You can put them into a blender to make them smooth; however, I like them a bit chunky. And, you can throw a pinch of salt and pepper in; just to give them added layers of flavor.

12Divide the sweet potatoes between two plates.

13Add the burgers and top with the sautéed onions.

15Serve while nice and warm; possibly with a side salad, and a crisp chardonnay. Enjoy.
