beef essentials: bacon and tomato roast

I assembled this tonight for myself and a friend. It is enough for two with leftovers for tomorrow. Not much work involved; just put it together and wait while it cooks in the oven. My suggestion is to relax and have a glass of wine or two… or three. So, you ready… Let’s get into the kitchen.

Ingredients For beef essentials: bacon and tomato roast

  • PLAN/PURCHASE
  • 2 lb
    eye of round roast
  • 2 slice
    bacon
  • 14 oz
    diced tomatoes, 1 can
  • 1 c
    beef stock, not broth
  • 1/4 c
    red wine, dry variety
  • 1 tsp
    dried oregano
  • 1 tsp
    dried parsley
  • 1 tsp
    dried thyme
  • 1 - 2 pinch
    cayenne pepper
  • salt, kosher variety, to taste
  • white pepper, freshly ground, to taste
  • flour, all-purpose variety, for dusting
  • ADDITIONAL ITEMS
  • carrots
  • potatoes
  • celery
  • garlic

How To Make beef essentials: bacon and tomato roast

    PREP/PREPARE

    You will need an oven-proof pot with a tight-fitting lid.

    Gather your ingredients (mise en place).
  • 4
    Place a rack in the lower position and preheat the oven to 300f (150c).
  • 5
    Add the tomatoes and the dry spices to a pot over medium heat and allow to simmer for 3 – 5 minutes.

    Add the beef stock, and wine, then continue to simmer for an additional 2 minutes.

    Meanwhile, salt and pepper the roast, and dust with some flour.

    Add to the pot and bring back up to the simmer.

    Place the bacon over the top of the roast and place into the preheated oven for 2 hours.

    After 2 hours add the veggies… your choice.

    Put the lid back on and bake for an additional 2 hours.

    Remove from the oven and serve, while nice and hot, with the veggies and sauce. Enjoy.
