beef essentials: bacon and tomato roast
I assembled this tonight for myself and a friend. It is enough for two with leftovers for tomorrow. Not much work involved; just put it together and wait while it cooks in the oven. My suggestion is to relax and have a glass of wine or two… or three. So, you ready… Let’s get into the kitchen.

Ingredients For beef essentials: bacon and tomato roast

2 lbeye of round roast

2 slicebacon

14 ozdiced tomatoes, 1 can

1 cbeef stock, not broth

1/4 cred wine, dry variety

1 tspdried oregano
-
1 tspdried parsley

1 tspdried thyme
-
1 - 2 pinchcayenne pepper

salt, kosher variety, to taste

white pepper, freshly ground, to taste

flour, all-purpose variety, for dusting

potatoes

How To Make beef essentials: bacon and tomato roast

1PREP/PREPARE

2You will need an oven-proof pot with a tight-fitting lid.

3Gather your ingredients (mise en place).

4Place a rack in the lower position and preheat the oven to 300f (150c).

5Add the tomatoes and the dry spices to a pot over medium heat and allow to simmer for 3 – 5 minutes.

6Add the beef stock, and wine, then continue to simmer for an additional 2 minutes.

7Meanwhile, salt and pepper the roast, and dust with some flour.

8Add to the pot and bring back up to the simmer.

9Place the bacon over the top of the roast and place into the preheated oven for 2 hours.

10After 2 hours add the veggies… your choice.

11Put the lid back on and bake for an additional 2 hours.

12PLATE/PRESENT

13Remove from the oven and serve, while nice and hot, with the veggies and sauce. Enjoy.
