Ingredients For beef enchiladas

  • 10
    flour tortillas (the softshell taco size)
  • 2 lb
    ground beef
  • taco seasoning (to taste)
  • 1 tsp
    minced garlic
  • 3 can
    (10 oz each) enchilada sauce, mild
  • 1 c
    chopped onion, divided
  • 2 can
    (4.5 oz each) chopped green chiles, divided
  • 2 1/2 c
    mexican blend shredded cheese, divided

How To Make beef enchiladas

    Spray a 12x18 pan with cooking spray. (if you don't have that large of a pan, I've split them between two pans, using a normal cake pan, and a 8x8 pan)

    Brown ground beef with taco seasoning and garlic, drain. Put in fridge to cool slightly (so the shredded cheese doesn't melt when adding ingredients together)

    In a large bowl, stir together cooked ground beef, 2 cans enchilada sauce, 3/4 cup onion, 1 1/2 cans of the chopped green chiles, and 1 1/2 cups of cheese.

    One at a time, arrange hamburger on the tortilla slightly off-center. Roll the tortilla and put in the pan, seam side down.

    Once all enchiladas are rolled, pour the remaining can of enchilada sauce over tortillas, and top with remaining cheese, onion, and green chiles.

    Bake at 375 for 20 minutes. Let sit for a few minutes before serving. Top with sour cream, if desired.
