beef & broccoli casserole

This recipe turned out pretty good. Earlier in the week I had "Pinched" a Philly Cheese Stuffed Peppers" recipe and had leftovers. Created this casserole and was pretty surprised how good this tasted! I had some workers over at my house tiling my bathroom, so I decided to use them as my taste testers. They expressed how good it was and asked for seconds! (Secretly, I'm hoping my tile work comes out as great as this new recipe! LOL) It's really a very versatile recipe where you could replace the meat with poultry or just make it vegetarian. Enjoy!

Ingredients For beef & broccoli casserole

  • 2 c
    chopped beef/steak (i use left overs)
  • 2 c
    cooked brown & wild rice (you can use any kind of rice you prefer)
  • 2 c
    bechemel/white sauce
  • 2
    green peppers diced
  • 1 pkg
    sliced mushrooms
  • 1 sm
    onion
  • 2 c
    cheese (pick your favorite!)
  • salt & peper to taste

How To Make beef & broccoli casserole

    Turn your oven on to 375 degrees.

    Cook your rice and while the rice is simmering make your white sauce and steam the broccoli.

    Make your white sauce with cheese and set aside. Leave enough cheese to top the casserole.

    Steam (with your microwave) the broccoli and set aside. When cooled, chop.

    In a large saute/frying pan use a little bit of oil and saute your diced onions, diced green peppers and mushrooms. When these are almost done throw in your beef. When meat is medium rare you are done with this step.

    Now you have all your ingredients and you mix them all together in a casserole dish and top with cheese. Don't forget to salt and pepper to your taste. You can make it spicier with any spices/seasonings you prefer.
