This is a classic Irish dish that gets its flavorful kick from the Irish beer, Guinness. It is an excellent one-pot meal just in time for St. Patrick's Day!

3 sliceraw bacon, chopped

1 Tbspvegetable oil

2 lbbeef stew meat

1 1/2 cguinness beer (do not sub)

3 cbeef stock
-
2 clovegarlic, minced

1/2 tspsalt

1/2 tspblack pepper

12 ozbaby carrots
-
4celery stalks, sliced into 1/2 inch chunks

1 lgonion, peeled and cut into chunks

1 - 2 Tbspflour
-
1/3 cwater
How To Make beef and guinness casserole - steph

1Place bacon in heavy soup pot or Dutch oven and cook over high heat until crisp. Stir in vegetable oil and stew meat. Continue cooking for 8 - 10 minutes, or until meat is browned.

2Stir in beer, beef stock, garlic, salt, and pepper; reduce heat to low, and simmer, covered, for 30 minutes. Add carrots, celery, and onions. Stir well, and cook for one hour or until meat is tender.

3Mix flour with water and stir into stew. Cook 1 - 2 minutes, or until sauce is thickened. ENJOY!!
