Ever since this whole mess started, and we are spending more time at home, I have been working on recipes that that are easy/peasy, and some that are a bit more complicated. This recipe started with a frozen roast, and a two-stage method to make it super yummy and tender. So, you ready… Let’s get into the kitchen.

  • PLAN/PURCHASE
  • 2 - 3 lb
    frozen beef roast, more on this later
  • 1/2 sm
    yellow onion, rough chop
  • 2 - 3 clove
    garlic, minced
  • 1 md
    carrot, rough chopped
  • 1 c
    beef stock, not broth
  • 1 c
    light beer
  • 1 Tbsp
    hot sauce, i prefer frank’s
  • 1 tsp
    salt, or to taste
  • 1/2 tsp
    black pepper, freshly ground
  • red pepper flakes, to taste
  • 1 c
    bbq sauce, your favorite
  • ADDITIONAL SPICES (OPTIONAL)
  • cayenne pepper
  • ground cumin
  • paprika
  • choose what you like

How To Make bbq essentials: two stage shredded beef roast

    You will need an Instant Pot, or other device that allows you to pressure cook and slow cook.

    I am using a frozen roast because so many of us have roasts in the freezer. In addition, this is a top round, but most roast types should work in the recipe.

    Gather your ingredients (mise en place).

    Add the veggies to the bowl of your Instant Pot.

    Add the remainder of the ingredients and stir to combine.

    Add the frozen roast.

    Set your Instant Pot to pressure cook, high, and let it cook for 60 minutes. Then, wait about 20 minutes before releasing any leftover pressure.

    Leave everything in the pot, and set the Instant Pot to slow cook, high, then cook for 1 hour.

    After 1 hour, remove the beef, allow to cool and shred.

    Discard the cooking liquid and wipe out the bowl.

    Return the shredded beef to the Instant Pot and mix in 1 cup of your favorite BBQ sauce. Then, slow cook on low for an additional hour.
