My fiancee' doesn't like sweets and baked goods, so for his birthday, I came up with these fake cupecakes!

Ingredients For bbq beefcakes

1 lbground beef
-
1 canrefrigerated biscuits

1/2 cbbq sauce (i use sweet baby rays)

1 1/2 cmashed potatoes

1 smonion, chopped

1/4 ccheddar cheese, shredded
How To Make bbq beefcakes

1If making mashed potatoes from scratch, do that first. Keep warm

2in Med skillet, soften the onion over med-low heat, til translucent

3raise heat, add ground beef to pan, cook til brown, no longer pink

4while meat is cooking, preheat oven to 350, spray muffin pan with cooking spray

5flatten biscuits with rolling pin, til large enough to fit in muffin pan, about 4in round, press into muffin pan

6Once beef is cooked, drain off fat. Return to heat, add BBQ Sauce, mix, heat thru

7scoop beef mix into prepped muffin pan, gently mounding meat into center of dough, bake for 10 Min

8carefully load mashed potatoes into piping bag with large round or star tip. Pipe potatoes on and around half baked beef cakes as you would frost a cupcake. Bake 10 min

9gently sprinkle cheese over each BeefCake, return to oven til cheese is starting to melt, but not loose its shape (2 min?)

10Serves 4 adults (2 cakes each) or up to 8 kids
