- MARINADE

1 1/2 Tbspdijon mustard

3 Tbspolive oil

1 Tbspsesame oil

1/2 cgreek-style plain natural yogurt

2 Tbspfresh rosemary, roughly chopped

4 lgcloves garlic, minced

1/2 mdshallot, finely chopped

1 Tbspfreshly squeezed lemon juice

1 Tbspbalsamic vinegar

1 tspbrown sugar such as demerara

1/2 Tbspworcestershire sauce
-
1 tsphot sauce such as cholula®
-
1/4 tspcayenne pepper
-
1/4 tsppaprika, sweet mild
-
freshly ground black pepper, to taste (i always use mixed peppercorns)
- SHISH KEBABS

1 lbcross rib steak, largely cubed
-
8 lgmushrooms, washed
-
16pieces red pepper, washed and cut about 2-inch x 2-inch
-
16pieces red onion, cut about 2-inch x 2-inch
-
16 lgcherry tomatoes, washed
How To Make bbq beef shish kebabs

1In a medium bowl, combine all the marinade ingredients; whisk until well blended. Place cubed beef in a large re-sealable plastic bag and pour marinade over. Close bag and massage meat until well coated. Transfer to the refrigerator for 2 hours.

2Skewer protein and veggies, starting with a mushroom, red pepper, red onion, tomato, beef then red pepper, red onion, tomato, beef; repeat with mushroom and so on.

3Brush veggies and beef with the remaining marinade; discard the rest.

4Place kebabs on hot BBQ (500-600ºF) and turn a 1/4 rotation every 2 1/2 minutes, closing the lid each time. Makes 4 skewers.
