Tried this the other night. I added some ground beef to it, and it was pretty good.

Ingredients For barbecue macaroni with corn and scallions

  • 1 1/2 c
    dry elbow macaroni
  • 1 1/2 c
    fresh or frozen corn kernels
  • 3/4 c
    purchased barbecue sauce
  • 1 Tbsp
    chili powder
  • 1 1/2 c
    halved cherry or grape tomatoes
  • 1/4 c
    chopped scallion

How To Make barbecue macaroni with corn and scallions

    Cook macaroni as pkg. directs. Add corn to same pot 2 minutes before pasta is done cooking. Strain pasta and corn, reserving the pasta cooking water. Mix barbecue sauce and chili powder in large bowl. Stir in macaroni, corn, tomatoes, and scallions until mixed. If sauce becomes too thick, stir in enough reserved pasta water to thin it out. Serves 6
