bacon wrapped jalepeno stuffed with cheese burgers
I made these monsters for the Bud and Burger competition. We especially loved the stuffed jalepenos wrapped in bacon with the sauce, definately making these again as appetizer. The burger itself was way too big for my MIL and me, we cut it in half.

Ingredients For bacon wrapped jalepeno stuffed with cheese burgers

18 lgjalepeno, each around 2 1/2 to 3 inches long

4 ozcream cheese,room temperature

3 ozquesadilla cheese, grated

3 ozpepper jack, diced

1 Tbspfinely chopped onion
-
1 oz4 cheese mexican cheese blend, shredded

3/4 ozchopped chipolte in adobe, chopped

1 Tbspjuice from adobe can
-
24 ozground beef
-
6 ozground chorizo
-
6 sliceonion
-
6 slicetomato
-
6 lgromaine leaves
-
6 ozslices quesadilla cheese

cdressing
-
11/3 cmayonnaise
-
1 Tbspchcopped chipolte in adobo
-
1 Tbspadobo juice
-
1/3 csour cream
-
1 Tbspcilantro paste
-
salt and pepper to liking for burgers

6crusty burger buns, we like whole wheat
How To Make bacon wrapped jalepeno stuffed with cheese burgers

1In a large bowl with an electric mixer combine the cream cheese, quesadilla, pepperjack, onion, mexicheese, chopped chipolte and sauce. Cover and chill

2Combine the ground beef and chorizo and form into 6 patties Season with salt and pepper

3Char the jalepenos either in oven under broiler or grill. Put in a glass bowl and cover with saran wrap to steam at least 20 minutes.

4Remove the charred skin. Cut enough of the side of jalepenos to stuff them and then cover with piece you have cut out. Wrap completely with bacon to cover cheese.

5Preheat grill to medium high and grill the burgers about 5 minutes per side, or to your likeness. Put Quesadilla slices on each burger last 5 minutes of cooking.

6While the burgers are grilling grill the bacon wrapped jalepenos at the same time. I found that it takes the jalepenos a little more time to cook than the burgers.

7Toast the buns the last few minutes of cooking

8Assemble with bottom bun, burger, onion, tomato, stuffed jalepeno (use 3) lettuce, generous amount of dressing on the top bun and cover.
