A family favorite already! Came from Jan 2012 Southern Living! Used the meatloaf as main entree DEFINITELY MAKING AGAIN Page 93 of the January magazine for the Entire Recipe "Edward's Open-Faced Meatloaf Sandwiches.

Ingredients For awesome meatloaf

7 slicebacon (thin) or 5 thick

2 cchopped or diced onions (1 large white)

1/2 cfinely chopped or diced celery

2 clovegarlic, minced

2 cchopped fresh mushrooms

2 lbground chuck
-
1 1/2 csoft, fresh breadcrumbs

3 lgeggs
-
1/4 ccola soft drink
-
2 Tbspbourbon (i did not use)
-
2 tspworcestershire sauce
-
1/2 cketchup
-
1 1/2 tspsalt
-
1/2 tspfreshly ground pepper
- TOPPING
-
2 Tbsplight brown sugar (for topping)
-
1 Tbspsoy sauce (for topping)

1/2 cketchup
How To Make awesome meatloaf

1Preheat Oven to 350 Cook bacon in large skillet over medium heat stirring often 8 - to minutes or until crisp. Remove bacon and drain on paper towels reserving drippings in skillet

2Add onions, celery, garlic to hot drippings and saute 3 minutes

3Add mushrooms saute 4 minutes.

4Transfer mixture to large bowl and let cool to room temperature

5Add ground chuck, breadcrumbs, eggs, cola, (bourbon), worchestershire, 1 1/2 tsp salt, 1/2 tsp pepper, 1/2 cup ketchup and cooked bacon to cooled onion mixture. Combine by hand.

6Stir together brown sugar, 1/2 cup ketchup and soy sauce in separate bowl

7At this point I made two small loafs and put on the ovens broiler pan. Brush top with mixture from #6. (Original instructions call for one loaf in lightly greased 9x5 loafpan.)

8Bake for 1 hour and 20 min to 1 hour 30 minutes or until meat thermometer registers 155 degree. Reserve 1 cup drippings

9GRAVY - 1 1/2 Tbsp butter; 1 Tbsp all purpose flour; 1/2 cup beef (or chicken) broth; the 1 cup of saved drippings; 1/4 tsp salt; 1 tsp freshly ground pepper; 1/4 tsp fresh lemon juice (I did not use the lemon juice)
