A friend sent this to me this morning... and it sounds sooooo good! Dinner's already in the crockpot for tonight, but I'm looking forward to next weekend! (It's from the Campbell's Kitchen) I think when I make it I'll take the time to season and brown the roast in my iron skillet first, I guess it preference.

Ingredients For autumn beef pot roast au jus

  • 4 c
    peeled sweet potatoes cut in 1 1/4 inch chunks (about 1 1/2 pounds)

    onion, coarsely chopped
  • 2 md
    granny smith apples, cored and each cut into 12 wedges
  • 1 can
    (10 1/2 ounces) campbell's condensed beef broth
  • 2 tsp
    dried thyme leaves, crushed
  • 2 lb
    boneless beef chuck roast

    Place sweet potatoes, onion, apples, broth, and thyme in the crockpot /slow cooker. Add roast.
