1 cpancetta, diced

1 tspdried rosemary

4 Tbspdijon mustard

4focaccia buns, split and toasted

1 Tbspolive oil

1red onion, sliced

2 Tbspbalsamic vinegar

1 tsphoney

1 Tbspminced shallot

1 1/2 cmixed greens

41/4-1/2-inch thick slices manchego cheese

1fuji apple, thinly sliced
How To Make apple pancetta manchego burgers on balsamic greens

1In a medium bowl, mix together the beef, pancetta, salt and pepper to taste and dried rosemary. Form into four patties and refrigerate until ready to cook.

2Spread 1 tablespoon of Dijon mustard onto all of the four focaccia bun tops.

3Heat olive oil in a grill pan to medium high heat and grill the onion slices until softened and browned on the edges.

4While onions cook, dress the greens: In a medium bowl, whisk together the balsamic vinegar, honey and minced shallot. Toss with greens, then place equal amounts of greens onto all four of the focaccia bun bottoms. When onions are done, set aside.

5Add beef patties to grill pan and cook for 4 minutes. Flip, cook for 2 minutes, then add one slice of cheese to each patty. Cook for 2 more minutes, then place patties on the dressed greens on each bottom bun.

6Top patties with equal amounts of onions and apples, then add the top buns. Serve immediately. (Recipe may be adapted for outdoor grilling if desired.)
