I had a lot of chicken fried steak left over and decided to make a new soup out of it. This turned out to be delicious, and it reminds me so much of Campbell's Vegetable Beef soup, only it tastes a whole lot better! You can also use chunks of chuck beef seasoned with my special seasoning, dredged in flour and seared if you don't have any leftover chicken fried steak. Ingredients For bonnie's almost campbell's vegetable beef soup
- SOUP

2ribs of celery chopped

1medium onion chopped

1small green bell pepper chopped

2carrots sliced
-
3medium potatoes diced

1tablespoon minced garlic from jar
-
1cup tomato puree
-
2cans beef broth
-
1can of water
-
1tablespoon beef granules
-
1large bay leaf
-
1 to 2tablespoons special seasoning below or more to taste

1cup cooked green beans
-
olive oil for frying
-
1pound leftover chicken fried steak or use fresh beef
- SPECIAL SEASONING

1/2cup kosher sea salt
-
1/4cup ground black pepper
-
2tablespoons white ground pepper
-
1 1/2teaspoons cayenne pepper
-
2tablespoons ground cumin
-
1/4cup garlic powder
-
2tablespoons hungarian paprika
-
2tablespoons dry minced onions

1Combine all the ingredients for the seasoning and mix well. Store in an air tight pint jar. 2I use a dutch oven like this to make my soup.

3It takes about 20 minutes to chop and saute fresh meat. If using fresh meat, simmer the soup for about a half hour or 45 minutes before adding the vegetables. If you are using leftover chicken fried steak. It is already tenderized. Simmer the soup about two hours until the vegetables are tender.

4CHOP AND SAUTE Add celery, onion, bell pepper, carrots, potatoes and garlic to the dutch oven. Saute all the vegetables in a little olive oil, except the cooked green beans which you will add the last 5 minutes of cooking time.

5SEASON IT Add the beef broth, tomato puree, water, beef granules, bay leaf and the special seasoning. Add salt if necessary.

6SERVE IT Have a big bowl with cornbread and enjoy!
