Some years ago, my husband and I spent a lot of time in Kenya. I had a very dear friend in Nairobi who made this dish, which I have made regularly for 25+ years. It is easy and very scrumptious! My family loves this dish.

Ingredients For african beef and rice

1 lbround steak, cubed

2 Tbspvegetable oil

1 cwater
-
1bay leaf
-
1 tspsalt

1/4 tspred pepper flakes, to taste

1 can16 oz. kidney beans, drained

1 craw white rice
-
2 mdgreen peppers, chopped

1 mdonion, chopped

1 1/2 tspsalt
-
1 tspcurry powder

1/4 tspblack pepper
How To Make african beef and rice

1Preheat oven to 350º.

2Brown the beef in oil in skillet; add water, bay leaf, 1 tsp. salt and red pepper flakes. Cover and simmer for 45 minutes.

3Drain beef reserving the broth. Add enough water to make two cups of liquid; adding the cooked beef and remaining ingredients. Pour into a 2 quart casserole dish; cover and bake for 50 minutes.

4Stir to mix before serving.
