From old cookbook found at garage sale titled, of all things, Chinese Cooking. (LOL)I have not used this recipe, but that is going to change. It reads quick, simple and delicious. I am going to try. How about you.

Ingredients For soft fried noodles with mushrooms

one5 oz pkg fine egg noodles

2 tbssafflower oil, or your choice

1 cupbamboo shoots
-
1 cupfresh mushrooms,sliced

1 cupalmonds,sliced
-
1/2 cupchicken broth
-
3 tbssoy sauce & salt to taste
How To Make soft fried noodles with mushrooms

1Cook noodles in large pot in boiling, lightly salted water 8 minutes, drain well.

2Heat oil in wok or skillet over low heat. Add noodles, stir-fry 4 minutes. Stir in bamboo shoots, mushrooms, and almonds, mix thoroughly.

3Stir in broth, soy sauce, and salt. Reduce heat to low, simmer, covered, 20 minutes or until liquid is almost absorbed.
