This is a quick and tasty salad that can be made with cooked shrimp or chicken or pork added if desired. We like either way. Makes a nice dish for a summer BBQ side too.

Ingredients For peanut broccoli salad

12 ozpkg. broccoli slaw, chopped to bite size pieces

1 bunchgreen onions, cleaned and sliced some tops too

1/3 ccanola oil

1 tspsesame seeds
-
3 ozpkg. ramen noodles, crushed,( save seasoning pkg. for another time)

1/4 cgranulated sugar
-
1/4 cseasoned rice vinegar or white vinegar
-
1 Tbsplite soy sauce
-
1 tspdark sesame oil
-
1/2 choney roasted peanuts
-
1/2 choney roasted cashews, chopped slightly
-
1/2 tspcrushed red pepper flakes, optional
How To Make peanut broccoli salad

1Combine onions and chopped broccoli slaw in a large bowl. Heat 2 Tablespoons of the oil in a medium skillet over medium-low heat. Add sesame seeds and crushed noodles. Cook and stir until noodles begin to turn golden brown. Add to broccoli mixture.

2Whisk together sugar, vinegar, soy sauce,sesame oil and remaining canola oil in a small bowl. Pour dressing over broccoli mixture. Add all the nuts and red pepper,if desired. Toss until coated evenly.
