This is a quick and tasty salad that can be made with cooked shrimp or chicken or pork added if desired. We like either way. Makes a nice dish for a summer BBQ side too.

Ingredients For peanut broccoli salad

  • 12 oz
    pkg. broccoli slaw, chopped to bite size pieces
  • 1 bunch
    green onions, cleaned and sliced some tops too
  • 1/3 c
    canola oil
  • 1 tsp
    sesame seeds
  • 3 oz
    pkg. ramen noodles, crushed,( save seasoning pkg. for another time)
  • 1/4 c
    granulated sugar
  • 1/4 c
    seasoned rice vinegar or white vinegar
  • 1 Tbsp
    lite soy sauce
  • 1 tsp
    dark sesame oil
  • 1/2 c
    honey roasted peanuts
  • 1/2 c
    honey roasted cashews, chopped slightly
  • 1/2 tsp
    crushed red pepper flakes, optional

How To Make peanut broccoli salad

    Combine onions and chopped broccoli slaw in a large bowl. Heat 2 Tablespoons of the oil in a medium skillet over medium-low heat. Add sesame seeds and crushed noodles. Cook and stir until noodles begin to turn golden brown. Add to broccoli mixture.

    Whisk together sugar, vinegar, soy sauce,sesame oil and remaining canola oil in a small bowl. Pour dressing over broccoli mixture. Add all the nuts and red pepper,if desired. Toss until coated evenly.
