Ingredients For chole / chana masala (chickpeas punjabi style)

1 cchole (chickpeas) [soaked in sufficient water overnight]

2 Tbsponion chopped

1/2 ctomato puree

1 tspginger paste

1 Tbspchana masala
-
1bay leaf
-
1/2 tspgreen chilli, chopped

1 tspred chilli powder
-
1/4 tspcinnamon powder

1/4 tspcardomom powder [optional]

2 Tbspoil
-
salt to taste

1teabag [optional]
How To Make chole / chana masala (chickpeas punjabi style)

1Cook chikpeas with sufficient water (2 - 2.5 cups) with cinnamon, cardomom, little salt and pinch of baking soda till very soft. Traditionally people use a tea bag while cooking chole to give it a dark colour.

2Heat oil in a wok, add bay leaf and onion. Saute onion in medium heat till light brown, add tomato puree and cook till oil separetes. Add chole / chana masala and cook for 1/2 a minute. Add cooked chickpeas, salt, ginger, 1/2 cup water and red chilli powder. Cook for about 10-15 minutes till the gravy is thick. Adjust the gravy consistency as per your taste.

3serve with fresh coriander and onion.
