Ingredients For chicken satay

1 Tbspcoriander seed - toasted and grind

1 tspcumin seed - toasted and grind

1/2large yellow onion

6 clovegarlic

1inch fresh ginger
-
1/4inch fresh galangal
-
2 stalklemon grass
-
1 Tbspturmeric, ground

4 Tbspbrown sugar

1 csweet soya sauce

4 Tbspcooking oil

4fresh tomatoes

6 lbchicken breast cut into 1-inch cubes

1 tspsalt

bamboo skewer soaked overnight
How To Make chicken satay

1Finely blend all the above ingredients (except the chicken!). Reserve 4 tablespoons of the blended spice to brush over the satay during grilling.

2Marinate all the chicken with the blended spices overnight in the refrigerator for best flavor. Minimum time for marinating the meat is 2 hrs.

3Soak the bamboo skewers in water overnight prior to skewing the chicken to prevent from burning on the grill.

4Grill the chicken skewers on a hot grill for 3 minutes on each side, brush with the reserved blended spice.

5Serve with peanut sauce.

6How to toast and grind spices •Soak the two seeds in cold water for 1 minute then drain. •Toast in a wok on the stovetop until the seeds are golden brown and aromatic •Grind in a spice-grinder.
